Saba Grill with Ponzu Sauce

Ingredients

  • A saba (mackerel) fillet
  • A pinch of salt
  • 5cm leek
  • 2 tablespoons ponzu
  • 1 teaspoon sugar
  • 5cm radish

Instructions

  1. Sprinkle a pinch of salt on mackerel fillet and let it sit for 10 minutes. Pat dry with paper towel.
  2. Grill the mackerel in a pan or a grill oven until cooked. If you are using a pan, cover the pan with the lid so that it cooks faster.
  3. Finely chop the leek, add ponzu and sugar, cover loosely and microwave on medium high for a minute.
  4. Serve the mackerel with grated radish and the microwaved sauce on top.

Notes

  • If you don’t have ponzu, you can make homemade ponzu from scratch! Mix 1 tablespoon vinegar, 1.5 tablespoon of soy sauce and 0.5 tablespoon of fresh lemon juice.
