Stripped Squid Rice

Dried squid is a very common nibble for drinks here. There are many different varieties of dried squid. For this dish, we use Squid Somen. Somen is very thin Japanese noodle. And as you may be able to guess from its name, Squid Somen is dried squid shaped as somen noodles.

If you like squid, you would definitely love this rice with its full flavor of squid!!

Ingredients (Servings 2)

  • 150g or 1 cup of uncooked rice
  • 18g or 1 packet of Squid Somen
  • 1-2 teaspoons fresh ginger
  • 2 tablespoons mentsuyu (3x concentrated)

Instructions

  1. Cut the ginger into very thin strips.
  2. Put the rice in the rice cooker. Cut the squid somen (an inch long) with scissors on the rice cooker (It is easier to cut them with scissors than a knife).
  3. Add strips of ginger on rice and squid somen. Add 2 tablespoons of mentsuyu in a cup and fill it up with water. Add it to the rice cooker.
  4. Let it cook and serve!

Notes

  • When using rice cooker, the ratio of rice and water should be 1:1. So 1 cup of rice : 1 cup of water. So for this recipe, amount of water plus mentsuyu should equal 1 cup.
  • Usually, rice cooker has water measurement line marked in its bowl so you can follow that.
