Pork Belly and Burdock Root – Butter Soy Sauce Sauté

Main Course

Ingredients

  • A burdock root
  • 1 clove garlic
  • 150g pork belly slices
  • 1 tablespoon sugar
  • 1 tablespoon spoon mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon water
  • 1 teaspoon butter
  • black pepper
  • sesame seeds

Instructions

  1. Wash the burdock root and lightly peel off the skin with back of a knife. If you are using a think one, cut it vertically into half, then slice it thinly.
  2. Finely chop the garlic to mince.
  3. Heat a pan and cook pork belly with garlic. Add burdock roots and stir fry until everything is cooked. Add sugar and stir fry for a minute, then add soy sauce, mirin and water and heat until reduced. Turn off the heat, add butter and black pepper.
  4. Serve with sesame seeds on top.

Notes

  • Do not over peel the burdock root as it loses its earthy and deep flavor.
  • This sweet soy sauce favor goes really well with rice. You can even mix it with rice and make rice balls!
