Pork Ginger

Pork Ginger also known as Shogayaki in Japanese, is a very popular Japanese dish. It is definitely one of my comfort food! It is also super easy so please give it a try!

Ingredients (Servings 2)

  • 220g thinly sliced pork loin, collar or belly
  • 1/2 onion
  • 15g ginger
  • 1.5 tablespoon flour
  • a pinch of salt and pepper
  • 1 tablespoon vegetable oil
  • 2 tablespoons sake
  • 2 teaspoons mirin
  • 1.5 tablespoon soy sauce
  • 1.5 teaspoon sugar
  • a pinch of ajinomoto umami seasoning

Instructions

  1. Slice the onion into 5mm pieces.
  2. Cut the ginger into half, grate one piece and cut the other piece into tiny strips.
  3. Sprinkle salt and pepper lightly over the pork, and dust the pork with flour. This softens and tenders the meat.
  4. Heat a tablespoon of vegetable oil in a pan and cook the pork on medium high until golden brown. Add the sliced onion and stir until cooked.
  5. Lower the heat and add the sauce ingredients (sake, mirin, soy sauce, and sugar) stir well, add ajinomoto and stir well again.
  6. Serve and enjoy!

Notes

  • Dusting the pork with flour thoroughly in the key to keep the pork tender. So you would want to dust it thoroughly!
  • Try not to overcook the pork to serve it tender as well.
