The Greatest Miso Soup




  1. Shred/cut the leek into small pieces.
  2. Microwave bonito flake for a minute on 600w without a lid and powder the flakes with hands.
  3. Add powdered bonito flakes and ajinomoto into water and bring to boil.
  4. Add leek and tofu and heat for a few minutes.
  5. Reduce heat to very low and add miso.


  • Use natural miso without MSG/dashi for this recipe, as ajinomoto together with bonito flakes bring out the umami.
  • Do not heat on high after adding miso as it loses its miso umami flavor.
